02 · The roastery

Twelve minutes in a copper drum.

We roast in small batches, a few kilos at a time, and write down every curve. Light coffees come out soon after first crack to keep their fruit; the espresso goes longer for body and sweetness.

04 · Beans by mail

Fresh roast, on a schedule.

Pick a spot on the flavor map, or let us choose. We roast on Monday, pack on Tuesday and send it out the same day, every week or every other.

How fresh are the beans?

Every bag is roasted within the week and dated. We recommend brewing between four and twenty-one days after roasting.

Can you grind for me?

Yes, for any brewer. Tell us what you use at home and we'll grind to match.

Can I watch a roast?

On roasting mornings the drum is visible from the bar. Come early and ask questions.

Do you supply cafés and offices?

We roast wholesale for a small number of cafés and offices. Ask at the bar to start a conversation.
