Restaurants deal with more agencies than most small businesses. Expect the local health department (plan review, food service permit, inspections), the building department (permits and certificate of occupancy), the fire department (hood suppression and occupancy), the state revenue department (sales tax), and, for alcohol, the state alcohol authority plus federal permits for some sales. Signs, outdoor seating and music can each need their own permit.

## Permits that catch restaurants by surprise

- Sign permits from the city
- Sidewalk or outdoor seating permits
- Music licensing for played or live music
- Grease trap permits from the utility
- Food manager certification for at least one person on site

## Alcohol track

Alcohol licensing is set by each state, often with local approval, and some activities need federal permits. Start early, because hearings and public notice periods can take months. See the federal Alcohol and Tobacco Tax and Trade Bureau for what applies at the federal level.

## Inspection readiness

- Hand sinks stocked and accessible
- Thermometers in every cooler
- Labels and dates on prepared food
- Chemicals stored away from food
- Pest control records available
- Certified manager on duty
